I first made these truffles as a gift for my sister's birthday. She loves truffles and cookie dough, so when I saw this recipe I immediately thought of her.
I received a box of truffles for Christmas, so after finishing them off I saved the box and wrapped the top with a piece of Berry Bliss Designer Series paper. I used an alphabet stamp set to stamp "truffles by jess" on the paper before I taped it to the box top with sticky strip. After I loaded the box up with truffles I wrapped a piece of wide Chocolate Chip ribbon around it.
The second time I made these to serve at my "For the Love of Chocolate" class and to share with some friends. They received rave reviews and many requests for the recipe, so here it is!
Cookie Dough Truffles
1/2 cup butter, softened
3/4 cup packed brown sugar
2 cups all-purpose flour
1 can (14 oz.) sweetened condensed milk
1 teaspoon vanilla extract
1/2 cup mini semisweet chocolate chips
1-1/2 pounds semisweet candy coating, chopped
In a mixing bowl, cream the butter and brown sugar until light and fluffy. (I let the electric mixer go for at least 10 minutes, scraping the sides every now and then.) Add the flour, milk and vanilla; mix well. Stir in the chocolate chips. Shape into 1 inch balls; place on waxed paper-lined baking sheets. Loosely cover and refrigerate until firm, 1-2 hours.
Melt the candy coating in the microwave, stirring often until smooth. Dip balls in coating; place on waxed paper-lined baking sheets. Refrigerate until firm, about 15 minutes. Store in the refrigerator.
Enjoy!
